ZooFit Recipe of the Week: Let’s Get Ready to NACHO!

For the record, I am not the biggest sports fan. I’m actually not really sure if the riff on the words in the title “Let’s get ready to rumble” is at all related to sports ball or not.

But I live in the Seattle-ish area. You can’t walk down the road, or walk into a store, or do ANYTHING without seeing something about the Seahawks. Which I’m pretty sure is a sports ball team (I’m kidding, I know who they are).

I also grew up in a household where my dad watches EVERY sports ball game in the universe. Guys, he RE-watches games from decades ago. Who DOES that?

Growing up with my dad, and living in the Seattle-ish area means I know full well that this Sunday is Super Bowl Sunday. Just don’t ask me which teams are playing, I have no idea. The Poughkeepsie Pelicans? The Alaskan Grizzlies?

The other thing I know for sure is there will be Super Bowl parties. And dips. Lots and lots of dips. Which got me thinking, how can we make the Super Bowl a little more ZooFit? And then I remembered my own dips I make.

I’ve shared a couple of recipes which will work great for Super Bowl Sunday. Last week’s Hummus variations are great with veggie platters and even sandwiches or potato chips. But when I think of Super Bowl dips, I immediately think of nacho cheese dip. And in recent years, I’ve separated from the world of unhealthy dips to substitute my healthier versions.

Nacho cheese dip is also a bit exclusionary. It’s dairy, so lactose-intolerant people can’t enjoy it. If you get packaged nacho or queso dip, one of the main ingredients is mono and diglycerides, a derivative of palm oil. Plus there is just a ton of sodium, preservatives, and artificial flavoring. And we ENJOY all that?

My version is Paleo-approved, Keto-approved, and every other diet you can think of. It’s also vegan-friendly, getting the cheesy flavor by combining cashews and nutritional yeast. While I prefer the fresh veggies, you can still enjoy this dip hot or cold, with tortilla chips, tacos, or quesadillas. Serve it up for your party, and go sports ball!

Vegan Nacho Dip

Ingredients

  • 2 cups cashews, soaked in water for 2 hours and drained
  • ¼ cup salsa or sugar-free tomato paste
  • ½ cup lemon juice
  • ½ cup nutritional yeast
  • ¼ cup water, plus extra if needed
  • 1 tsp salt
  • ½ tsp ground mustard

Directions

  1. Add all ingredients to a food processor and blend until smooth, scraping the sides with a spatula.
