Tofu Wontons

October 1st is World Vegetarian Day.  In the spirit of eating less meat, I decided to fix one of my favorite vegetarian dishes, tofu wontons.  These are easy to fix, but I unfortunately don’t know how to make a SMALL batch, so it can be somewhat time consuming if you are making more than 10.

To make this animal-friendly treat, here’s what to do:

Ingredients:

  • Olive oil for frying
  • 1 package of wonton wrappers
  • 1 package soy tofu
  • 1 C broccoli
  • 1/2 C carrots
  • 1/4 C green onion
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • a small bowl of water and a barbecue brush
  • soy sauce

Directions

  1. Preheat large skillet over medium heat.  Swirl olive oil to coat skillet.
  2. Finely chop tofu, broccoli, carrots, and onion (I have an undying love for my ninja chopper).  Place ingredients in a large mixing bowl.  Sprinkle with salt and pepper. Mix well.
  3. Take a Wonton wrapper and brush water along the sides of the wrap.  Spoon 1 tablespoon of tofu mixture in the middle of the wrap.  Fold the edges of the wrap together and seal the edges.tofu wontons 2
  4. Repeat filling process until you have 8-10 wontons, or enough to fill your skillet.
  5. Place wontons in skillet and saute until brown, about 3-4 minutes.  Flip wontons and saute for another 3-4 minutes.
  6. Remove wontons onto a dish and keep warm.  Re-coat skillet with olive oil, and repeat process of filling wraps and cooking.  Remember to re-coat skillet before each batch.tofu wontons 3

This recipe makes about 40 wontons.  To serve, plate the number of desired wontons, and put soy sauce in a small sauce bowl for dipping.   If you would like to tempt fate and make a smaller batch, cut the entire recipe in half.
