Conservation Fitness Program, Day 5

I had a busy day again, and rather than rant about personal stuff again, I’m just going to report my day and send you all on your merry way.

Breakfast: Egg sandwich with Tillamook cheese
Lunch: Peanut butter and banana sandwich
Dinner: Cabbage enchiladas- oh man, were these good! I’ll share the recipe, because I think you all would love them, but unfortunately, I don’t have any photos to share. But these were remarkable.

Cabbage Enchiladas

  • 1 Can enchilada sauce
  • 1 head of cabbage
  • 1 can black beans, drained and rinsed
  • 1 C cooked brown rice
  • 2 (4 ounce) cans of chopped green chiles
  • ¼ C fresh cilantro, coarsely chopped
  • Salt & pepper (to taste)
  • ½ C shredded cheese, divided
  1. Bring a large pot of salted water to a boil. Peel the cabbage leaves – make sure to peel them gently, as you don’t want them to tear. Running cabbage under hot water as you are peeling seems to help a ton. Toss the cabbage leaves into the pot of boiling water for a couple of minutes. Remove and set on a paper towel to dry.
  2. Mix the beans with brown rice, cilantro, chiles, and ⅓ C shredded cheese. Season well with salt & pepper.
  3. Spread the enchilada sauce in the bottom of an 9×13 baking dish.  Place a portion of chicken mixture inside each of the cabbage leaves and roll up. Place each cabbage roll in the baking dish. Once done, pour the rest of the enchilada sauce over them. Top with shredded cheese.
  4. Bake at 350° for about 25 minutes.
  5. Top with anything you please. Salsa, hot sauce, jalapenos, avocados, cilantro, more cheese, freshly squeezed lime juice, sour cream and the list goes on! Enchiladas are so fun to make because you really can get creative and definitely make use of the veggies and pantry items you already have on hand.

Coaching Masters

Mood: I got TIRED this afternoon, and knowing we were going to have a late night with a party at a friend’s place in Seattle, I decided I might do some good with a nap. I wish it had been a little shorter, because I wanted to get another quick workout on the rower, but I guess I really needed the extra rest, because I ended up sleeping for 90 minutes, rather than an hour.

Challenges: Man, Chris and I are not normally party people, so I personally am really bad at judging my limits at parties. Our friend we visited and I have a long history of taking tequila shots together, and tonight was no different. But I also had a cider, and some samplings of pumpkin beer. Along with all the great food served at the party, I feel I went too overboard. I try to remember each day is a new beginning, and I had a rare fun night off with good friends we don’t see very often, so it’s not the end of the world that I went overboard. It’s something I want to work on, but it’s not a big enough deal to beat myself up over.

Progress: Not weighing myself until Sunday, but I had to take a look and smile at myself in the mirror. I know a week isn’t usually enough to notice big changes, but I feel pretty good about this week. Vegetarian isn’t too hard for me and Chris to practice since his kidney disease. We’ve had to lower his protein intake and watch what kind of protein to consume, mainly for the phosphorus, so eating vegetarian became pretty second nature to both of us. However, that being said, I did forget all about it being vegetarian WEEK for my program. Because it isn’t a big deal to eat meatless most of the time, I wasn’t thinking I needed to stay vegetarian, and some of the foods we sampled had meat in them. This is the problem with being flexitarian. You do still eat meat on occasion. It’s fine. I’m not going to guilt myself over the issue. It just shows me how second nature not eating meat is to me, that I forget I’m actually FOCUSED on not eating meat. Whoops.

I’ve also decided on my path. I want to continue going to zoo professional conferences and discussing how ZooFit utilizes principles of zookeeping and conservation. But to increase my fitness credentials, I think I am going to go for an American Council on Exercise (ACE) certification as a Group Fitness Instructor. ACE is highly recognized in the industry, so it’s possible I can maybe get a part time job at a facility to teach classes, and MAYBE incorporate ZooFit into the gym’s roster. I plan on going for that in the new year, so hopefully you can follow me on that journey as I finish the certification program.

Halloween is almost near. I am hoping with next week being Keto week, I can focus on nipping some of my bad sugar habits in the bud. I feel I need a detox from today…
