Energy Balls

Energy Balls (Vegan)  3 servings: 210 calories, Carbs: 27 g, Fat: 9 g, Protein: 20 g


  • 3 Tbsp almond butter
  • 2 cups pitted dates
  • ⅓  cups oats
  • 1 tsp cinnamon
  • 1 Tbsp chia seeds


  1. Place all ingredients in food processor.  Blend until smooth- consistency should be paste-like.  If paste is too dry, add small amounts of water, one tablespoon at a time until desired consistency is achieved.
  2. Once paste is sticky, take about ⅙ of mixture in hand and roll into small ball.  Repeat for remainder of mixture, forming 6 balls.  
  3. Refrigerate for one hour before eating.  One serving is 2 balls

30 Days of ZooFit: Save Room for Pie

Today was a lesson in how to practice sustainability and healthy eating while still enjoying your treats. It was a special occasion for my CrossFit gym. The old owners are moving to New Orleans and wanted to have a going away party. We all wanted our new lords and masters to feel welcome with pomp and circumstance.

I have personal feelings about the Oregon Zoo, I’m a little jilted if I can be honest.  But putting personal frustrations aside, I love the zoo.  I think a great amount of conservation and education happens at the zoo, and it’s where I was inspired to create EarthFit, so this being my last week in Oregon, I decided to have one last trip to the Oregon Zoo and check out all the aspects that correlate well with EarthFit.
